Fruit Mince Morsels
These beautiful little pies are easy to make and taste delicious. A real crowd pleaser!
Ingredients

250g butter, softened

1 teaspoon vanilla essence

1/2 cup caster sugar

2 cups plain flour, sifted

1/3 cup rice flour, sifted

1 teaspoon lemon rind

2/3 cup fruit mince

icing sugar to serve
Method

Preheat oven to 180°C. Grease a 24-hole, mini muffin pan.

Using an electric mixer, beat butter, vanilla, sugar and lemon rind in a small bowl until light and fluffy.

Remove mixture to a large bowl. Stir in flours.

Turn mixture onto a floured surface. Knead until dough comes together.

Roll one level tablespoon of mixture and place into one hole of muffin pan.

Using your finger, make a hole in the centre of the mixture.

Spoon one teaspoon of fruit mince into hole. Repeat for remaining holes.

Bake 12-15 minutes or until shortbread is lightly golden.

Remove from oven and stand in pan for 5 minutes before removing to a wire rack to cool completely.

Serve morsels dusted with icing sugar.

Store in an airtight container in a cool, dark place for up to 5 days.
